Temperature effect on the rheological behavior of sapodilla (Achras sapota L.) pulp [Efecto de la temperatura en el comportamiento reológico de la pulpa de níspero (Achras sapota L.)]
Abstract
Sapodilla (Achras Sapota L.) is an exotic fruit, which is very consumed for its nice taste and appetizing. However, it is a fruit that has not been widely used in industrial processing. In this work, the temperature effect on the rheological behaviour of sapodilla pulp in the interval from 10oC to 70oC was determined. The sapodilla pulp was obtained from the Pilot Plant of Fruit and Vegetables, University of Cordoba, in Berastegui (Colombia), through net refinery 1.5 mm opening; they were packed into hermitic bags and subsequently refrigerated to 4oC. The rheological measurements were determined in a DV-II +Pro model Brookfield viscometer. The medlar pulp was adequately described by the power law model and showed shear thinning behaviour, it did not present tixotropic. Temperature did not influence significantly in flow behaviour index (n), but on the consistency index (k), nevertheless it did not adjust to the Arrhenius model.
