Evaluation of vacuum packaged and freezed tuna filets

Abstract
The physico-chemical, microbiological and sensoryindicators of vacuum packaged and freezed tuna filets, andraw materials (fresh fish and soy oil) were evaluated. Theproducts belonging to two lots showed similar characteristics,so there was a little variability among productions and forthat, in the expected shelf life of the final products, whichfulfilled the sanitary regulations.
