Abstract

In this work the implementation of a Database including properties of substances present in must and wines that are distilled to obtain various type of liquors, is described and analyzed. The final objective of the Database is having readily available the necessary information for modeling the phase equilibrium in the complex mixtures included in a must or wine and to be able to simulate alcoholic distillation processes. First, some information and background on the importance of knowing exact values of physical, chemical and thermodynamic properties of substances for calculations in the process industry, is given. Some discussion on aspects related to the structure and utility of the Database is presented d details on the Database designed are given. The main conclusion of this work is that one of the problems for the low development of wine distillation simulation is the lack of information about the equilibrium properties for the complex mixtures found in must and wines.
