Predictive model of pH and temperature effecton the growth of E. coli and Alcaligenes sp.

Abstract

n the present study, growth «in vitro» responses ofAlcaligenes sp. and E. coli isolated of restructured roll andaffected by pH (5 to 7) and temperature (2 to 4 ºC, 6 to 8 ºC, 15 ºC)were studied. Growth curves were fitted using Gompertzmodified equation and specific rates derived from curve fitwere modelled. Predictions for specific growth rate, generationtime and phase lag duration could be done for any combinationof conditions within the matrix. Predictions of growth frommodel were compared with experimental data and this showedthe model to be suitable for predicting growth of Alcaligenessp. and E. coli in restructured meat rolls.
