A Digital Platform for the Management of Grapes and Wine Quality in the Winery

© 2020 IEEE.The management of industrial winemaking is a complex challenge since there is a lot of uncertainty from the vineyard to the winery. In particular, climate change has had a negative effect on the management of harvest dates and the winery's capacity. Digital tools like the Industrial Internet of things (IIoT) allow integrating the productive processes data and used it for decision-making. In addition, model-based design such as the machine learning approach and first-principle models can generate a computational tool to optimize the fermentation process's management. In this work, we developed a digital platform to manage grapes and wine quality in the winery. We defined, adapted, and implemented an infrastructure of IIoT to use the digital platform in the winery successfully. Finally, we validated the digital platform and the infrastructure of IIoT in a test pilot of the industrial scale during the 2020 harvest season.
