Beef production and the beef evaluation system in Chile: Description, characterization, and quality

Abstract

Most Chilean beef production is based on pastoral systems with low-technology inputs. Beef from Chilean production systems is rich in conjugated linoleic acid, omega-3, and phytochemicals that are considered healthier, especially those from grasslands with high species diversity. Chilean system of classification of cattle and beef classification and nomenclature is mandatory. However, it does not focus on beef quality but on carcass quality
