Characterization and comparative effect of drying process on antioxidant activity over Chilean sea cucumber (Athyonidiun chilensis)
Abstract
Chilean sea cucumber, Athyonidium chilensis, has both a high nutritional value and a high economic potential to increase the trade of other marine products. Currently there is a minimal commercialization of sea cucumber within Chile, and it is sold exclusively to China in dry or frozen forms where it is then used nutraceutical, cosmetic and nutricosmetic products marketed mostly in Asia. The objective of this study was to determine the nutritional, heavy metals, mineral and amino acids contents of Chilean sea cucumber (eviscerated and ground form) and compare its antioxidant capacity following three different drying processes. The results showed that A. chilensis had very high level of protein contain (68.17%), ash (17.41%), fiber (13.22%), and very low fat and carbohydrate contents.
